     Peracetic acid (C2H4O3) is a mixture of acetic acid (CH3COOH) and hydrogen peroxide (H2O2) in a watery solution. It is a bright, colorless liquid that has a piercing odor and a low pH value.

     
    Peracetic acid is used mainly in the food industry, where it is applied as a cleanser and as a disinfectant. Since the early 1950’s, acetic acid was applied for bacteria and fungi removal from fruits and vegetables. It was also used for the disinfection of recicled rinsing water for foodstuffs.

     

    Peracetic acid is also registered for use in dairy/cheese processing plants, on food processing equipment, and in pasteurizers in breweries, wineries, and beverage plants. It is also applied for the disinfection of medical supplies, to prevent bio film formation in pulp industries, and as a water purifier and disinfectant. Peracetic acid can be used as a cooling tower water disinfect, where it prevents bio film formation and effectively controls Legionella bacteria. 

     

    Peracetic acid solutions contain a mixture of peracetic acid, acetic acid and hydrogen peroxide. These sanitizers are effective against all microorganisms, including bacterial spores. They are effective over a wide pH range and are applied in cool or warm water. Peracetic acid solutions have a pungent odor and should be used in a well ventilated area. Concentrated solutions are strong oxidizers and can be corrosive to the skin.
